Gino D'acampo Perfect steak and chips with peppercorn sauce

It means what it says in the title - the perfect steak and chips with creamy peppercorn sauce and mixed green salad from Gino D'Acampo.

Ingredients
2x 200 g thick-cut sirloin steaks
2 tbsp olive oil
Sea salt and freshly ground black pepper
2 garlic cloves, still in their skins
1 thyme sprig
2 tbsp butter
For the peppercorn sauce:

A splash of brandy or white wine, water or stock is fine if you'd prefer
3-4 good grinds of black pepper
150 ml double cream
Water
For the chips:

2 large potatoes, peeled (ideally Desiree)
Olive oil, for drizzling
Sea salt and freshly ground black pepper
Green salad, to serve

Instructions:

How to make Gino d'Acampo Perfect steak and chips with peppercorn sauce

For the steak:

1 Oil and season the steak on both sides with salt and pepper. Heat a frying pan until it's hot then place the garlic, thyme and steaks in the pan. Cook for 2 minutes without moving, then turn the steak over. Add a good knob of butter to the pan and baste the steaks as they cook for another 2 minutes.
2 Remove from the pan and leave to rest on a covered warmed plate for up to 10 minutes.
For the sauce:

3 Return the pan to a medium heat and deglaze with the alcohol, water or stock (reduce if using alcohol) then add the pepper and cream. Bring to a simmer and cook until slightly thickened. Taste and adjust seasoning or add more stock if too thick.
For the chips:

4 Preheat the oven to 200C/Gas 6. Slice the potatoes into your favourite chip size or wedge shape, placing them in a large bowl of cold water as you go. Rinse the potatoes well and drain, then pat dry with kitchen paper.
5 Toss the chips in oil and sea salt then place in a single layer on a baking tray and roast in the oven for about 15-25 minutes until golden brown, turning half way through cooking.
6 Serve the chips alongside the steak, salad and sauce.
