Gino D'Acampo Slow cook beef curry from Lets Do Lunch with Gino and Mel

Slow cook beef curry

Ingredients
Before you start...

This dish tastes better the longer you cook it. It will need to cook for at least 2 hours.
4 tbsp sunflower oil
1 kg stewing beef cut into 2 inch pieces
2 onions, chopped
4 garlic cloves, finely chopped or grated
A good pinch of chilli flakes
1 inch piece fresh root ginger, peeled and grated
3 tsp ground cumin
6 green cardamom pods
1 stick of cinnamon
3 tsp ground coriander
1 tsp ground turmeric
2 tsp garam masala
½ small cauliflower, broken into florets
150 g green beans, halved
2 red peppers, cut into large dice
1 tin of chopped tomatoes
1 tbsp tomato puree
beef stock
Juice of 1 lemon
2 tbsp chopped coriander to finish
Steamed rice, to serve

Method: How to make Slow cook beef curry from Let's Do Lunch Gino and Mel

Heat an ovenproof casserole dish with a lid over a low to medium heat, add some oil and fry the onions for a good 10 minutes - this will give you a good base flavour.

Add the spices and the ginger and garlic when the onions are well caramelised and then add the tomato puree, beef and vegetables. Stir well and add the stock and tomatoes and season well. Bring back to a simmer then place the lid on.
Cook on the hob top for 2-3 hours on a low heat – remove the lid for the last 20 minutes and increase the heat to reduce the sauce or place in a low oven for 3-4 hours or longer, (up to 6 if you have time) remove the lid to reduce the sauce if needed for the last 30 minutes.
Scatter over the coriander and squeeze in the lemon juice before serving with the steamed rice.
