Gino D'Acampo's Chicken korma recipe Lets Do Lunch With Gino And Mel

Ingredients for Gino and Mel Chicken Korma recipe
4 chicken leg portions, or 8 thigh pieces
5 cm fresh root ginger
5 fat garlic cloves
1 cinnamon stick
6 cloves
10 green cardamom pods
2 bay leaves
2 onions, finely chopped
plain yoghurt
1 tsp ground coriander
1 tsp turmeric
A pinch of chilli powder
4 tbsp ground almonds
4 tbsp double cream or creme fraiche
2 tsp lemon juice
Coriander, to garnish
Oil, for frying
Sea salt and ground black pepper

Instructions for Chicken Korma recipe from Lets Do Lunch:
How to make Gino D'Acampo's Chicken korma
1 Pound the ginger and garlic together in a pestle and mortar with a little water to help make a smooth paste or if you have a food processor, blitz it. Set aside.
2 Heat the oil in a large, wide non-stick saucepan. Add the whole spices and bay leaves, fry for a minute or so until they smell fragrant. Add the onion and cook gently until really soft, this will take about 10 minutes. Add the garlic and ginger paste and fry until the liquid has evaporated then add the chicken, yoghurt, coriander, turmeric and season.
3 Bring to the boil whilst stirring and add 100ml of water to come about halfway up the chicken. Bring back to the boil, then reduce heat to low, cover and cook gently for 20-30 minutes, remove the lid and if there is still a lot of water, boil uncovered for 3-4 minutes.
4 Once the chicken is done, add the ground almonds and cream. Simmer for 5 minutes, or until the sauce has the right creamy consistency. Add the lemon juice to taste and adjust seasoning, if required.
5 Serve with steamed basmati rice, toasted flaked almonds and a little pot of yoghurt if you want it extra creamy or it's too spicy.
